Grilled Apple Walnut Chicken

So tonight, I REALLY wanted some kind of appley chickeny dinner, but I couldn't find a recipe anywhere that was quite what I was looking for. So I MADE ONE UP. It was delicious, and here is the recipe, because I am totes making this again:

-Thin sliced chicken breast
-chopped golden delicious apples
-red onion
-chopped walnuts
-balsamic vinegar
-italian seasoning
-salt and pepper


Cook up the chicken breast in a frying pan with a little olive oil. When it's cooked, add all the other ingredients according to your own discretion and taste.

Clearly I stink at making this sound very fancy or official, but it's easy and it's delicious. Just add the chopped bits until it looks delicious. A few splashes of the vinegar and some liberal application of seasonings made this a super winner in my book. Fancy it up a little more? Top it with just a little cheddar cheese just before serving. (Or if you're not on a budget, try a more fancy cheese. We're mild cheddar folks most of the time around here, because money.)

Coconut curry

Hello hello! The purpose of this blog is to be a recipe book for me to remember all the great stuff I make and munch. My food philosophy is simple: make it real, make it delicious. For the entire month of October (except for Halloween), I am doing a sugar fast, so it seems especially important for me to record the delicious foods that help me through!

Disclaimer: My "sugar" fast is for almost all processed sugar; however, I am allowing myself to have bread, even white bread, very sparingly; dressings and sauces; and honey, sparingly. For the most part, my goal is just to eat natural, healthy, wholesome foods, without having them boxed up by some company. I realize that means a lot more time in the store and in the kitchen for me, and, for the sake of being healthier and happier, I'm good with that!

I'm a woman of few words when it comes to food, and I don't believe in writing a humongous post for each recipe. So without further ado, here is the first TERRIFIC recipe I have to post!

My husband made this three nights ago. It was so incredibly delicious and wonderful that I made it again the next night! (There were no leftovers. No surprise.) We made it with coconut rice instead of quinoa, but I definitely think we'll try the quinoa next time. My husband made it as the recipe directs, and when I made it I just added chicken. It's perfect either way; the meat was not missed at all when we didn't put it in. For an incredible curry recipe, I think this is a fantastic, no-fail recipe! We're going to try it next time with a more varied assortment of vegetables. I already can't wait to make this again!
